VEGAN BANANA BREAD

I searched high and low for the perfect banana bread recipe and then even when I found one and tried it, it would flop without eggs. I’m not actually a vegan but eggs have never settled well with my stomach so when I bake, I tend to look for vegan recipes.

I tried 5 recipes and they all were sub par so I started tweaking ones that I found until I came up with this one and it’s perfect!

Well not as perfect as it would be with gluten and sugar in it but you get the idea. :)

I avoid gluten because I have an allergy. I avoid sugar because it causes inflammation in the body, messes with blood sugar balance and can off set a hormonal imbalance. It also disrupts the gut microbiome and can make you constipated or bloated.

But… who doesn’t love a good treat!!

So anytime I make a recipe up or use one from another blog, I make sure that it’s made without refined sugar and uses banana, honey or maple syrup to sweeten.

I’m excited to finally post this banana bread since I failed at it so many times. Small wins, ammi right?

So here you go! All my FAILS can be your WIN!


INGREDIENTS:

3 ripe organic bananas
1/3 cup extra virgin olive oil
1/4 cup maple syrup
1/2 cup unsweetened almond milk (MALK recommended)
2 tbsp ground flax seed
2 cups all purpose gluten free flour
1 tbsp baking powder
1/4 tsp sea salt

DIRECTIONS:

  1. Preheat oven to 3560 degrees and line loaf pan with parchment paper.

  2. In a large bowl, mash 2 bananas. Stir in olive oil, maple syrup, and almond milk. Mix well , then whisk in the flax and let stand for 2 minutes.

  3. In a smaller bowl, mix together the gluten-free flour, baking soda and sea salt. Add dry ingredients to the wet ingredients until well combined. If your batter seems a little runny, you can add a little more flour until it thickens.

  4. Pour the batter into a loaf pan. Slice the remaining banana in half lengthwise or into small circles like above photo and place on top.

  5. Bake for 40 minutes or until knife inserted comes out clean.

  6. Let cool completely before slicing.

  7. Enjoy!

Feel free to jazz it up (yes, I said jazz) with some blueberries or walnuts if you like. Whatever floats your boat.

Turkey Sausage with Goat's Milk Tzatziki

You know how many people go to bed but have a hard time falling asleep because they can't stop thinking about stress or work? This happens to me, but with food and recipes! I guess it's not a terrible thing to think about all night. I'm constantly trying to come up with creative ways to make healthy food taste good and be easy to assemble. 

I've been reading a great book by Dr. Amy Myers lately titled, The Autoimmune Solution. I've lived with autoimmune for my whole life and have been working on healing it for over a decade. Keeping a healthy mind-set, exercising and eating well has helped me to a great place of healing today. If given the opportunity, the body has an incredible ability to heal itself. However, one person's food can be another person's poison.

One diet or way of eating may work for some people but not for others. Some people find that being vegan has helped them lose weight or lower their cholesterol. Some have found that eating meat has helped them, calm inflammation. There are many ways to eat, but the most important is to find the healthy way to eat for you!

For me and my symptoms, I have found that eating mostly Paleo with a small amount of goat's milk dairy and occasional gluten free grains or legumes has done well for my body. It keeps the inflammation down and my symptoms at bay. I stay away from sugar, alcohol, and caffeine as they only tend to ignite the problem and cause me to feel off track.

This recipe came to me in a dream the other week. Since I started incorporating goat's milk kefir, a recommendation from my good friend and colleague Nutritional Therapist Melanie Mack, and have been doing very well on it. Except for one thing. The flavor is boring! So, in this dream, I thought of how much I missed sauces in my life and that I could figure out how to make a tzatziki sauce from the kefir. I've paired the sauce with some turkey sausages and placed over a big bed of greens.

This recipe is easy and delicious and could be eaten for breakfast, lunch or dinner. The leftovers are great too!

Ingredients:

1lb organic ground turkey
1 tsp sage
salt and pepper to taste
1 tsp coconut oil

Tzatziki:

1 cup goat's milk kefir
1 cucumber (diced and chopped into fine pieces
1 Tbsp. fresh dill
salt and pepper to taste

Additional items:

Dark leafy greens like kale or spinach
1 tsp olive oil
half a lemon

Directions:

1. Place turkey in a bowl and add seasonings. Form into 8 small sausage balls

2. Preheat a cast iron skillet or safe non-stick pan to medium high with coconut oil.

2. Put sausages into heated pan. Cook each side for about 5 minutes or until cooked thoroughly.

4. Place goat's milk into a bowl and add chopped cucumber and spices

5. Place leafy greens at the bottom of a plat or bowl and sprinkle with melon and olive oil.

6. Add sausages and scoop come tzatziki into a side bowl.

7. Serve and enjoy.

Buckwheat Breakfast Bowl

This hearty breakfast packs a big super food punch. Full of energizing complex carbohydrates and anti-oxidants, it will keep you full longer and help speed up your metabolism. The added honey and cinnamon will balance hormones, boost fertility, and keep menstrual symptoms at bay.

Buckwheat Breakfast Bowl      

  Printable Recipe PDF

Ingredients:
1 cup Organic Buckwheat
1 cup non-dairy milk of choice or organic whole milk
1 tsp. raw honey
1 tsp. cinnamon

Garnish choices:
Shredded coconut
Goji berries
Fresh blueberries
Sunflower seeds 

Any other nut of choice (always soak for at least a couple hours in water)

1)      Prepare a larger batch of buckwheat to keep in the fridge for the week per instructions on bag (My favorite brand is Eden organic)

2)      Take ¾ cup cooked buckwheat and place in a small pan along with your milk of choice, honey and cinnamon on high heat

3)      You may have to break up the buckwheat a bit with a spoon as it sticks together from the fridge

4)      Bring to a quick boil then bring it back down to very low heat and let simmer with the lid on for 5 minutes with the occasional stir

5)      Remove from heat and place in a bowl

6)      Garnish with toppings of choice and enjoy

Stuffed Peppers (ground meat of choice)

All of the recipes on my website are gluten-free and dairy-free but full of flavor and family favorites. Most of the time when I have people over for dinner, they don't even realize they are so healthy. Well... maybe my Dad cause he's always looking for the bread.

Stuffed Peppers (printable PDF)


Ingredients:
1 lb. ground buffalo, beef, turkey or chicken
1 box of Pomi chopped tomatoes
1 chopped poblano pepper
1/2 tsp black pepper
1 tsp crushed red pepper
1 tsp garlic powder
1 cup spinach
¼ cup red onion finely chopped
6 large red, green, yellow, or orange peppers
1 cup brown rice (optional; add cooked rice to meat mixture)
Dash of hot sauce if you like it spicy!!


1)    Preheat oven to 375 degrees
2)    Prepare peppers by rinsing, chopping off the top and taking out seeds in the middle and place in a roasting pan.
3)    In a medium bowl put raw meat and all the spices and mix together
4)    In a skillet, sauté onion on medium for a few minutes until a little soft
5)    Add meat and sauté till brown
6)    Return this mixture to the bowl (no need to drain because these meats are extra lean) and add the diced tomatoes, brown rice (if desired) and spinach
7)    Fill the peppers with meat mixture to the top and return to roasting pan
8)    Place a little water in the bottom of pan, place cover on, and bake in the oven for 45-50 minutes or until the pepper is soft
9)   Shake a little hot sauce or add Jac's guac on top

 Serve with a side salad; makes great leftovers

Simple detox smoothie

After a long weekend away or a busy weekend of eating out, I like to fall back on something that will get me back on track. Having a go-to plan of action always helps me stay successful in my healthy lifestyle. 

Starting in the morning I like to take a few minutes to set my intentions for the day or week, spend a few minutes meditating, and then make a simple shake that will help my body digest and rid of the built up toxins. Breakfast is the most important meal of the day so even if you have stepped out of line the day before do not skip it. Simply fill it with the right ingredients to get the digestive process going. 

SImple Detox Smoothie

Ingredients:

2 cups non-dairy milk
1 Tbsp. flax seeds
1 scoop Vital Proteins Marine Collagen
1 Tbsp. Artisana cashew butter
1/2 an avocado
2 shakes cinnamon
1 tsp. vanilla

Blend and enjoy!

5 simple ways to detox the body

The body has the ability to naturally detox everyday. However, harmful environmental toxins, common allergies, and chemicals in our food have made it harder for the body to perform. When the body does not flush toxins properly it can back up in our organs and intestines, thus causing inflammation in the body. We become bloated, feel irritable, get rashes or even acne as a way for the body to signal that something has gone array. We think, "I'm just going to juice for 5 days, or I'm going to workout everyday, twice a day, to get back on track." The problem is, those things will not help with long-term success and may end up hurting more in the end.

If you are feeling any of the above symptoms, or simply have been overindulging a bit more lately, it may be time to try detoxing your body.  These home remedies are easy, inexpensive ways to get the blood flowing and the organs flushing. Plus, you can still eat food! I do always recommend staying away from excess sugar and alcohol and drinking tons of water while choosing any of these options. They are all very safe for you and have many benefits. Set yourself up for a home spa detox weekend and try them all.

 

1. Dry brushing

Dry brushing is a technique in which you use a high grade skin brush in small circles, starting at your ankles, and covering all the skin working towards your heart. Work your way up your legs to you arms, chest, stomach, and back. This will stimulate the lymphatic system which is a great way to eliminate toxins. Your lymphatic system is responsible  for eliminating cellular waste products and if not working properly will cause a build up and make you sick. Lymphatic congestion is a major factor leading to inflammation and disease. This is just one of the many benefits of dry brushing. The list goes on to increase circulation, reduce cellulite, relieve stress, and improve digestion and kidney function. My favorite one is from Dirty Girl Farm. I do it for about 2-3 minutes before my shower everyday. It's so invigorating and a great detox habit to be addicted to.

 

2. Home Hydrotherapy (hot/cold showers)

Your skin is your body's largest and fastest growing organ. Your skin is your protective coat and barrier between disease and germs coming in and eliminating toxins out. We take care of our skin by cleansing and moisturizing, but what about detoxing it? Try your own little spa experience at home with alternating hot and cold showers. The hot water has relaxing properties, will soothe stress and open the pores. The quick jolt of cold water right after will aid in the elimination of toxins and reduce inflammation in the body. Together it helps to improve circulation and makes your skin glow. This can be done any time you take a shower and is a quick way to detox you from feeling sluggish.


3. Foam Roll

If you aren't familiar with what a foam roller is, you can look one up and purchase one right here or you can pick one up at your local sporting goods store. A foam roller is used to stretch out your muscles before and after a workout or even after a stressful day. When you workout really hard or are under a bunch of stress it builds fascia in your muscles. The foam roller works to remove the build up and recover muscles more quickly than just stretching alone. It also helps improve flexibility and reduce stress. Try it everyday for 5 minutes at night and note the difference in your body at the end of the week. You can look up some videos on YouTube about how to properly foam roll your body.

4. Have "a" green juice

You don't have to juice all day, every day, for 5 days straight to experience the benefits of juicing. Just one green juice as a meal replacement is enough to send forceful signals to your organs to start eliminating toxins. Choose juices with ginger and lemon for their anti-inflammatory properties and cleansing effects.

5. Eat Soluble Fiber

Most Americans do not reach the amount of recommended dosage of fiber a day. Women should consume around 25 grams of fiber a day and men should come in around 38 grams a day. Fiber helps keep waste moving through your intestines and aids in elimination of toxins through the liver. It also helps to boost the good bacteria in your gut to keep everything healthy and running smoothly. Eating fibrous foods will also keep you full longer, so you are less likely to go looking for sweet or salty snacks later. Try adding some oats, lentils, beans, dark leafy vegetables, or fruits to your diet to get the amount you need. Also, make sure to drink plenty of water to stay hydrated and help digest these foods.

Jac-pot Mexican Shredded Chicken

Set it and forget it! If you like easy recipes that taste delicious then you are in for a double treat. This chicken dish takes a mere 10 minutes to prepare. I have used the chicken as a base for tacos, however there are so many ways you can use the meat. Burrito bowls, topping for a salad, tortilla soup or how about in an omelet?? This dish is great to set up for a Sunday morning so you can have a cozy, warm meal that day, and have a no-brainer lunch or dinner for Monday.

Mexican Shredded Chicken   Printable PDF

Ingredients:

4-6 Organic boneless skinless chicken breast
2 boxes of Pomi chopped tomatoes or organic diced tomatoes (if you can get them in a box or glass that is better than a can)
1-2 fresh poblano peppers, chopped
1 tbsp. chili powder
1 tbsp. cumin
1 tsp. smoked paprika
salt and pepper to taste

Instructions:

  1. Place all ingredients from ingredient list into a crockpot on low for 6 hours
  2. Take one chicken breast out at a time onto a cutting board and shred with 2 forks or a fork and knife
  3. Return chicken back to crockpot and repeat until all chicken is shredded
  4. Stir up well to mix all ingredients  
  5. Assemble chicken as desired

Don’t forget to pick up your additional items for tacos or burrito bowls

Chopped lettuce
Tomatoes or salsa
Rice or quinoa
Beans
Corn
Tortillas

Clay Pot Roasted Chicken

From the moment cool air hits in the morning, just about the second week of September, I start cooking like crazy. I love fall and all of the warm comforting dishes. The body craves warm foods rich in protein and high in fat during this time. I'm kicking off the season with my simple roasted chicken in a clay pot because you can make so many things from roasting one chicken. Also, clay pot cooking is safe cooking. First of all, the clay is a natural substance, unlike our man made roasting pans filled with lead and Teflon that can leak into food. Secondly, the clay is alkaline based, which will help to reduce the acidity of foods and balance the ph. This is great for people who have digestion issues or have heartburn as well. Lastly, clay is very porous. The moisture combined with the heat circulate through the pot during cooking to create delicate and delicious meals. This one is my fav.

This chicken dish is very versatile. I will provide some different options for seasoning and when you have finished your chicken save the bones! We'll be making bone broth with those after.  As always, we will use organic ingredients and spices. My chicken is from a farmer in Michigan named Bob Boles. He has the juiciest most healthy chickens I've ever cooked. If you are local, I suggest hooking up with him for some hens when he has them in stock. They are the best around. Thegrazinglife.com

Roasted Chicken - Printable PDF

Ingredients:

1 3-4 lb. whole chicken
2 lemons 1/4 ghee (melted)
salt and pepper
optional for flavor of choice: garam masala, cumin, or smoked paprika

Instructions:
1) Rinse your chicken and leave standing in a colander for 20 minutes (room temp)
2) If you are using a clay pot, do not pre-heat the oven. Soak the pot in lukewarm water for 15 minutes.
3) If you are using a traditional roasting pan, pre-heat oven to 400 degrees
4) Pat the chicken dry with a paper towel and place in pot breast down.
5) Squeeze one whole lemon over the chicken and pour over the melted ghee
6) Poke the second lemon with a fork and place inside the chicken
7) Season lightly with the salt and pepper and then choose the additional seasoning of your choice
8) Clay pot: place in cold oven and heat to 400 degrees
9) Roast chicken on 400 degrees breast down for 20 minutes
10) Flip the bird! Turn chicken over so it is breast up now and baste the juices from the bottom onto the chicken. Turn heat to 350 degrees. Sprinkle a touch more of your seasonings
11) Bake until the internal temp is 190 degrees or the legs separate from the body. about an additional hour.

Top 10 foods for hormonal balance and optimal fertility

Nutrition can play a powerful roll in helping a woman balance their hormones. If our hormones are unbalanced, it can affect many things in our health such as PMS, acne, mood swings, and fertility. The easiest and cheapest way to balancing them is to start with your food. 

Along with eating the food below, there are some other requirements to provide the best results. First, it is very important to choose organic. We are already exposed to enough toxic chemicals and pesticides, so the more you can keep away from them the better. If it is hard for you to afford all organic, then I recommend going by the guidelines of The Dirty Dozen. They set up a list of the foods that are genetically modified the most, so you can choose conventional when needed to save money. I also recommend finding and supporting a local farmer so you can be certain where your food came from. Living in a city or far from a farm? Head to Trader Joe's. All of their produce is non-gmo and their prices cannot be beat.

Second, your meat should be grass-fed, your fish should be wild-caught, and your chicken should be pasture-raised. Also, all of these should be raised without being treated with steroids or antibiotics. Eating meat or fish that has been administered these drugs can only raise your estrogen levels, which keeps your progesterone low, which makes you unbalanced. Catch my drift?

Lastly, even when you are eating all these healthy food items, stress can lay an elbow into your hormones too. Manage your stress levels by taking some deep breaths, walking, yoga, meditation, or reading a good book. Keep calm and read on!

Here are the top tens foods for balancing your hormones and optimizing your fertility.

1. Wild Salmon

Salmon is high in Omega3's and Vitamin B6, which helps regulate the hormones and ovulation, while also increasing cervical mucus and blood flow to the reproductive organs. Salmon is great to eat the few days leading up to your ovulation phase and during it.  

2. Avocados

High in mono-saturated fats, great for ovulation and has been shown to positively effect IVF outcomes. The healthy fats also help produce healthy eggs. A diet high in healthy fats is optimal for women TTC or achieve hormonal balance because it supports the endocrine system and brain function as well. Feeling extra stressed? 3. Chickpeas

These pack a huge vitamin B6 punch, which are essential for the production of healthy progesterone levels, as well as improving sperm and egg development. Most women are estrogen dominant. Symptoms include mood swings, PMS, bloating, acne and infertility. Eating chickpeas in any form post ovulation (2 weeks before period) is essential in dumping the estrogen from your body properly. Yay for hummus!

4. Honey

Raw honey can help stimulate ovarian function. Honey is very healing to the digestive track too and contains numerous antioxidant and anti-bacterial properties. Try hot water with lemon and raw honey first thing in the morning.

5. Buckwheat

A naturally gluten-free grain that is rich in compound d-chiro-inisitol, which has been proven to drop insulin and testosterone levels, and increase rates of ovulation, thereby improving fertility. Try this during your menstrual cycle to replenish minerals and vitamins and start the body preparing for a new cycle and help ease PMS symptoms.

6. Leafy greens 

Spinach, Kale, collard greens, etc. are high in folic acid, which is essential for healthy ovaries and also reduces the risk of spinal cord or brain defects in infants. Also, they are rich in vitamin E, magnesium, and calcium, which promote a healthy cycle. They are essential post ovulation to rid the body of high estrogen levels and spark progesterone for a symptom free period or carrying a pregnancy. Shelley's Salad

7. Eggs

Full of vitamin D which is essential in maintaining healthy ovulation. Don't skip the yolks! They also contain vitamins like folate and Vitamin A. The quality of the egg is very important so make sure they are organic, free-range, pasture-raised and cage-free. Eggs will help boost vitamin D levels. but if you suspect you are deficient, it may be crucial to supplement until your levels come back up again. Have your levels checked with your physician or specialist.

8. Sunflower seeds

These seeds are full of Zinc which helps your body efficiently use progesterone and estrogen levels, and helps with DNA production that can support egg quality. Sunflower seeds are also very beneficial for a healthy (cramp free) cycle. Carry some around and use them as a healthy afternoon snack or throw them on salads like this one. 

9. Maca powder

Maca is a Peruvian herb that is incredible for balancing hormones, increasing energy, and supporting healthy adrenals, because it is rich in alkaloids. Maca comes in powder form and can be added to any smoothie since the flavor is mild. 

10. Tumeric

Tumeric and other "warming spices" such as cinnamon, coriander, cumin, cardamom, and black pepper are great for creating a drier, warmer environment that is ideal for conception. They also have anti-inflammatory properties and can aid in digestion. Healing digestion is very important for conception. If you are having digestive issues you may want to start by healing those issues first before working on hormonal balance or TTC. Try this turmeric tea latte for an afternoon treat. 

incorporate these foods daily and you should see some relief from your mood swings, PMS, fibroids, PCOS, and help with your ovulation to create a healthy pregnancy. If you don't see positive changes after one cycle, then I suggest booking a consultation so we can figure out what the root cause is.

The top 5 foods that mess with your hormones and fertility

When balancing your hormones or TTC, there are toxins in the fertility world that are absolute no-nos. Even on a regular basis we should be avoiding these, but especially if you are experiencing hormonal symptoms like PMS, cramping, bloating, acne, or heavy bleeding. Also, during pre-conception, ideally 3 months before trying to get pregnant, it is imperative that you stay away from these items to optimize your cycle and get you pregnant faster.

1. Dairy

Dairy has become quite controversial today. Where it used to be a great source of vitamins and minerals and considered a top food on the pyramid, it has now become a source of inflammation and problematic for many women. Many of the cows in America are treated with a synthetic hormone called rBST to increase milk production. The synthetic hormone is full of estrogen and when consumed by humans can cause many illnesses and issues, especially directly related to your menstrual cycle, hormonal balance, and infertility. You can consume raw unpasteurized milk or Organic hormone-free milk in low quantities if it is hard for you to quit dairy all together.

A healthy alternative:

Full fat coconut milk. A healthy fat that is full of health benefits is a great substitute. Try mixing with water and blending in smoothies.

2. Caffeine

Caffeine can reek havoc on our endocrine system and hormones. When consuming caffeine, you are sending mixed signals to your cortisol levels causing your endocrine system to go rogue which can be very harmful to your adrenals. Cut back considerably or cut out completely.

A healthy alternative:

I know cutting out caffeine can be super brutal. Try incorporating half calf first, then decaf, then switching over to herbal teas that support healthy cycles and liver detoxification like raspberry leaf, dandelion root, and chamomile. remember to drink tons of water too.

3. Soy

Soy is one of two highest genetically modified foods in America. (#4 is the other!) Genetically-modified soy is full of toxic chemicals that are foreign to the body and put stress on our organ function since they do not know what to make of these chemicals. Soy mimics estrogen in the body too and can throw off hormones.

A healthy alternative:

If you are eating soy to avoid meat, try a healthier more supportive protein source like lentils, chickpeas and beans. Just remember to make you own from scratch and soak them prior to cooking to make them easier to digest

4. Non-organic corn

Like I mentioned before, this is the other highest genetically-modified food in America. Go for organic, non-gmo brands or from a farmer you trust. Bring your own chips to the Mexican restaurant! 

5. Sugar and simple carbohydrates (white starchy food like potatoes, flour, and bread)

Both of these food cause our blood sugar levels to spike immediately and our bodies then store the food as glucose, which is then stored as fat. This sends mixed messages to your cortisol levels and adrenals making it hard to utilize estrogen and progesterone effectively.

Healthy alternative:

For sugars, you can replace with honey, maple syrup, or coconut sugar.  For simple carbohydrates switch to complex carbs like brown rice, quinoa, buckwheat or other healthy grains to keep blood sugar levels even and keep energy high.

Jac's Guac (amole)

Nothing says summertime like a big bowl of fresh guacamole and some delicious corn chips (organic, of course)! I came up with this recipe last summer and it's a staple hit for all parties I attend. People will call me and request it in advance. It is super easy to make and a great way to incorporate healthy fats into the diet.

Ingredients:

4 large ripe organic avocados or 6 smaller ones**

2 large organic tomatoes (diced)

¼ cup chopped red onion

½ a small jalapeno chopped

3 tbsp. fresh chopped cilantro (no stems)

2 tsp. cumin

1 tsp. crushed red pepper

Juice from one squeezed lime

Salt and pepper to taste

Fun summer option: 1-2 chopped mangos (skin removed)

1)      Cut avocado in half, remove seed, and scoop out insides into a mixing bowl

2)      Smash avocado

3)      Chop up all other veggies and herbs as listed above

4)      Mix in all the herbs and onion except one tbsp. of fresh cilantro

5)      Move to a nicer platter and top with diced tomato and fresh cilantro

6)      To keep fresh longer, place saran wrap tight right on the guacamole so it doesn’t turn brown

** If you need to ripen you avocados faster, place in a paper bag with one banana. Don’t ask me how it works, it’s just perfect magic! Enjoy!
