VEGAN BANANA BREAD

I searched high and low for the perfect banana bread recipe and then even when I found one and tried it, it would flop without eggs. I’m not actually a vegan but eggs have never settled well with my stomach so when I bake, I tend to look for vegan recipes.

I tried 5 recipes and they all were sub par so I started tweaking ones that I found until I came up with this one and it’s perfect!

Well not as perfect as it would be with gluten and sugar in it but you get the idea. :)

I avoid gluten because I have an allergy. I avoid sugar because it causes inflammation in the body, messes with blood sugar balance and can off set a hormonal imbalance. It also disrupts the gut microbiome and can make you constipated or bloated.

But… who doesn’t love a good treat!!

So anytime I make a recipe up or use one from another blog, I make sure that it’s made without refined sugar and uses banana, honey or maple syrup to sweeten.

I’m excited to finally post this banana bread since I failed at it so many times. Small wins, ammi right?

So here you go! All my FAILS can be your WIN!


INGREDIENTS:

3 ripe organic bananas
1/3 cup extra virgin olive oil
1/4 cup maple syrup
1/2 cup unsweetened almond milk (MALK recommended)
2 tbsp ground flax seed
2 cups all purpose gluten free flour
1 tbsp baking powder
1/4 tsp sea salt

DIRECTIONS:

  1. Preheat oven to 3560 degrees and line loaf pan with parchment paper.

  2. In a large bowl, mash 2 bananas. Stir in olive oil, maple syrup, and almond milk. Mix well , then whisk in the flax and let stand for 2 minutes.

  3. In a smaller bowl, mix together the gluten-free flour, baking soda and sea salt. Add dry ingredients to the wet ingredients until well combined. If your batter seems a little runny, you can add a little more flour until it thickens.

  4. Pour the batter into a loaf pan. Slice the remaining banana in half lengthwise or into small circles like above photo and place on top.

  5. Bake for 40 minutes or until knife inserted comes out clean.

  6. Let cool completely before slicing.

  7. Enjoy!

Feel free to jazz it up (yes, I said jazz) with some blueberries or walnuts if you like. Whatever floats your boat.

Turkey Sausage with Goat's Milk Tzatziki

You know how many people go to bed but have a hard time falling asleep because they can't stop thinking about stress or work? This happens to me, but with food and recipes! I guess it's not a terrible thing to think about all night. I'm constantly trying to come up with creative ways to make healthy food taste good and be easy to assemble. 

I've been reading a great book by Dr. Amy Myers lately titled, The Autoimmune Solution. I've lived with autoimmune for my whole life and have been working on healing it for over a decade. Keeping a healthy mind-set, exercising and eating well has helped me to a great place of healing today. If given the opportunity, the body has an incredible ability to heal itself. However, one person's food can be another person's poison.

One diet or way of eating may work for some people but not for others. Some people find that being vegan has helped them lose weight or lower their cholesterol. Some have found that eating meat has helped them, calm inflammation. There are many ways to eat, but the most important is to find the healthy way to eat for you!

For me and my symptoms, I have found that eating mostly Paleo with a small amount of goat's milk dairy and occasional gluten free grains or legumes has done well for my body. It keeps the inflammation down and my symptoms at bay. I stay away from sugar, alcohol, and caffeine as they only tend to ignite the problem and cause me to feel off track.

This recipe came to me in a dream the other week. Since I started incorporating goat's milk kefir, a recommendation from my good friend and colleague Nutritional Therapist Melanie Mack, and have been doing very well on it. Except for one thing. The flavor is boring! So, in this dream, I thought of how much I missed sauces in my life and that I could figure out how to make a tzatziki sauce from the kefir. I've paired the sauce with some turkey sausages and placed over a big bed of greens.

This recipe is easy and delicious and could be eaten for breakfast, lunch or dinner. The leftovers are great too!

Ingredients:

1lb organic ground turkey
1 tsp sage
salt and pepper to taste
1 tsp coconut oil

Tzatziki:

1 cup goat's milk kefir
1 cucumber (diced and chopped into fine pieces
1 Tbsp. fresh dill
salt and pepper to taste

Additional items:

Dark leafy greens like kale or spinach
1 tsp olive oil
half a lemon

Directions:

1. Place turkey in a bowl and add seasonings. Form into 8 small sausage balls

2. Preheat a cast iron skillet or safe non-stick pan to medium high with coconut oil.

2. Put sausages into heated pan. Cook each side for about 5 minutes or until cooked thoroughly.

4. Place goat's milk into a bowl and add chopped cucumber and spices

5. Place leafy greens at the bottom of a plat or bowl and sprinkle with melon and olive oil.

6. Add sausages and scoop come tzatziki into a side bowl.

7. Serve and enjoy.

The Green Goddess (or God) Smoothie

Looking for the secret to slow down the aging process? Look no further. This smoothie is full of anti-oxidants and anti-aging ingredients. Replace this smoothie for breakfast or add it in post-workout and you will begin to glow within days. The spinach will give you a huge dose of iron to restore muscles.  The avocado and nuts will supply you with healthy fats to boost the metabolism and provide energy. I've included an orange to boost vitamin C and ginger for anti-inflammatory benefits. But where do you get the protein? The secret ingredient... Collagen. I'm sure you've been hearing this buzz word around town and may be wondering, what can it do for me?

Around age 35, our natural collagen begins to decrease causing poor digestion, achy joints, fine lines, wrinkles, and dull skin. Taking collagen will help boost your glow and beauty from the inside out which is the key to lasting vitality and health. Collagen is literally the "glue" that holds together our bones, muscles, cartilage, tendons, and digestive system and is the most abundant protein in our bodies.

2 cups spinach
1 cup water  
1/2 an orange
4 mint leaves
1 lime squeezed
1/2 inch ginger
1/2 cup soaked almonds (optional)

Chocolate Mint Shake

I use this smoothie as my go-to quick snack all the time. I try and keep the ingredients on hand so if I know I'll be driving around a lot that day or need a little something to get me by to dinner, I'm all set. I use a secret ingredient from Nature's Way called Chlorofresh, which is a mint flavored Chlorophyll. Chlorophyll helps in normal blood clotting, wound healing, hormonal balance, deodorizing and detoxification of the body and promotes digestive health. It has healing effects on oxidation and inflammatory conditions such as arthritis and fibromyalgia. It also is used as an internal deodorant. Consistent use will cut back on sweating and body odor from switching to natural deodorant. My second secret ingredient is Marine Collagen. This has single handedly changed my skin. After a few weeks of using this in smoothies I noticed smoother skin, less breakouts, and a plump dewy texture.

5 fresh mint leaves
Honey to sweeten (if desired, taste first)

Momma's Baked Chicken

This dish brings me back to my childhood because my mom would make this if we were sad, sick or cold. It's the ultimate food as medicine cure. Like most of my recipes, very minimal ingredients and effort required. If I had a DJ name it would be DJ Lazy Chef. So check it out and let me know what you think. Comments are encouraged, complaints go in the bin under the sink. Just kidding! Please let me know if you add or subtract anything and find a new creation!

Momma’s Baked Chicken


Ingredients: 

Organic chicken; 2-4 drumsticks, 2 thighs, 2 bone in breasts (I recommend buying the chicken already cut up because chopping a whole chicken is brutal) 
1 small bag of red skin potatoes
6-8 organic table carrots skinned, kept whole
1 large organic Spanish onion
½ cup of ghee
Salt & Pepper to liking
Options for a little bolder flavor; sprinkle of crushed red pepper, cumin or garam masala for an ethnic flair
 
Instructions: 
1)    Preheat oven to 400 degrees (chicken likes 400 degrees as my momma always said) 
2)    Melt ½ cup ghee
3)    Place all chicken in bowl and coat with ghee  
4)    Chop onion into slices
5)    Cut redskin potatoes in half (peel if desired) 
6)    Place potatoes, carrots, and onions in the bottom of roasting pan
7)    Place chicken over the top of the vegetables, pour rest of butter over everything  
8)    Season with salt and pepper to liking; add additional seasoning here if desired 9) Cover and roast in oven for 1 hour or until internal temp of chicken is 190 degrees

Turmeric tea latte

Warm your soul. Boost your immunity. Heal your gut. Balance your hormones. The list goes on and on for the many benefits of the hearty spice turmeric. In the ancient Indian system of holistic medicine known as "Ayurveda" this spice is used for it's healing properties and a method of treating many diseases, including cancer. Turmeric has extreme anti-inflammatory properties and can aid in many ailments from digestive issues to joint pain.

However, for as healing as it is, it does not have the most pleasant taste on it's own and is very messy as the yellow color can stain hands. In this recipe, you will make a larger quantity of paste to keep in the fridge. That makes it easier to use for each latte you make so you have less clean-up and is available on demand.

I like to sip on this sweet goodness in the afternoon to cure my sweet tooth and give me a little pick me up. Add a touch of cayenne for a detox benefit. 

Turmeric Tea Latte (printable PDF)

Make ahead and keep in fridge:
½ cup organic turmeric powder
5 Tbsp. coconut oil
2 pinches black pepper


Warm on stove and simmer for 10 minutes then store in an airtight jar for when you make your latte.

Latte:
1 ½ cups organic full fat coconut milk
1 tsp. turmeric fridge mix
1 tsp. raw honey
Pinch of cinnamon


Place in small pan and warm mixture on medium heat. Sip and enjoy!

Broccoli and arugula soup

Although this combo does not sound exciting I can assure you the taste is most delightful. Combining a hearty vegetable like broccoli with the light peppery taste of arugula is delicious and the recipe is brought together nicley with a touch of lemon.

I first found this recipe on Goop.com which I follow religiously. Goop and I share the same passion for detoxing the body with healing foods and drinks without starving yourself or going to extremes. 

With limited ingredients and fast prep this soup is an easy go-to when your energy is low and you are looking for something to pick you up. 

Broccoli Arugula Soup

Ingredients:

1 Tbsp. olive oil
1 clove garlic, thinly sliced
1/2 yellow onion, diced
1 head of broccoli, cut into small florets
2 1/2 bone broth
1/4 tsp. salt
1/4 tsp. pepper
3/4 cup arugula
1/2 lemon

Directions:

1. Heat olive oil in pan and saute onion and garlic until fragrant
2. Add broccoli and cook for 4 minutes or until bright green
3. Add water, salt and pepper, bring to a boil, lower heat, cover.
4. Cook for 8 minutes or until broccoli is really tender.
5. Pour into a blender with arugula and blend until smooth
6. Squeeze lemon over top when serving

Overnight oats

Talk about the fastest, easiest, and fool proof breakfast that was ever invented! Unfortunately, I cannot take the credit on this one.  With one quick shake, overnight oats are finished. Seriously, it will take you longer to buy the ingredients! This recipe is very versatile too. If you don't like something that I put in then you can certainly take it out and add your own spin on it. Just remember to use a glass container to store and if you heat it up in the morning, use the stove not the microwave. PLEASE!

Overnight Oats         Printable Recipe PDF

Ingredients:
1 Cup oats
3 tbsp. chia seeds
½ cup fresh berries
½ cup chopped nuts of choice (walnuts are my fav)
1 tsp raw honey (may need to be melted a touch before mixing)
Nondairy milk of choice (carrageenan free) or organic whole milk

More ingredient options:
Goji berries
Shredded coconut
Hemp seeds
Cacao powder (yes please!)
Nut butter

Instructions:
1)   Prepare this the night before you want to eat the oats.                                                                                                        
2) Combine oats, chia seeds, and honey in a small glass Tupperware or a mason jar and add milk cover over the top of the oat mix.  Shake it like a salt shaker baby!          
3)  In the morning, mix again and add fresh toppings of choice

Pumpkin, parsnip and (sweet) potato soup

Brrr... Ok I know I was praising fall a couple weeks ago but now I'm officially busting out the warm socks and making fires. This is the time where I hibernate and cook a ton. One thing I do love about this time of year is pumpkin. I know I have some other crazy pumpkin lovers out there too. This recipe is updated from last year's plain old pumpkin soup because I decided to add parsnips and sweet potatoes.

This is an easy recipe to whip up on the weekend and sip on all week since it only has 10 ingredients including spices. I use my own homemade bone broth but you can buy some organic chicken or vegetable broth if you need to.

Now let's bundle up and get to cooking!

Pumpkin Smoothie

Breakfast can be such a complicated meal, however it is the most important. Leaving the house without breakfast is like expecting your car to keep driving after there is no more gas. Eventually, you will just sputter out and barely make your way to the side of the road before passing out. Or you will try and revive yourself with terrible sugar treats and more coffee. We have to feed our brains people!! Having a nice mixture of healthy fats, proteins and carbs is a great way to make sure you get the nutrition you need to make it to lunch. This is called eating for your macros.

This delicious and nutritious fall smoothie will keep you full and fueled to make serious important decisions and bring up your productivity level stat. Try the second option to mix it up and please feel free to leave comments!

Pumpkin Smoothie         Printable Recipe PDF

¼ can of organic pumpkin
2 tbsp. almond or cashew butter
1 cup non-dairy milk (carrageenan-free) coconut, almond, or flax milk
1 scoop hemp seeds
1 tsp. raw honey (sweeten to taste)
½ tsp cinnamon
½ tsp cloves
½ tsp ginger

Optional: Omit 1 cup milk and add 1 cup Chai tea (brewed) *Serve warm... trust me, it's like a cozy hug!
